Put a little mussel into it.

Simple ingredients create amazing results.

1 Lb fresh mussels {cleaned[
8 cloves of garlic chopped
1 bunch parsley chopped
10 cherry tomatoes halved
1 onion diced
2 tsp olive oil
1 cup chicken broth or veg broth
1 cup dry white wine
4 tbsp butter divided
baked french fries.
salt and cracked pepper

Bake or fry your favorite fries. Then set aside

Clean the mussels under cold water do not submerse they will drowned
in a wok or a giant pasta pot place oil and heat slowly the garlic the onions and the salt and pepper.  When the garlic and onions are translucent then add cherry toms and cook down to where the tomato almost is not a tomato anymore.  Toss in your mussels, saute them to a little over tow minutes to release the flavor from the shell add your butter, wine and your broth.  Cover the pot and let them steam for 10 minutes undisturbed.  Remove lid then check to see if the mussels have opened if they have then turn off the heat. Toss in your parsley then mix well.  In a nice size bowl place fries in the bottom lay the mussels on top of them pour over the savory broth and enjoy.

I made this last Saturday night for my wife and one of my dearest Friends.  It reminded me while I was eating it the simplest things in life or actually the best.  Although you might think this sounds really difficult i assure you that it is not.  It is simple and delicious. 

In a life of uncertain chaos it is really nice to know that some things will pull you back to what is really important..  We cannot change the world.  we cannot control the wars or the unjust that happens to millions of people on a hourly basis.  The only thing that we have control over is our own catacomb that we call our life our existence.  I say turn off the news turn up the heat in your kitchen create memories that are positive for the ones that you love.  Through the mouth I say gets to the heart the quickest. The end of days may be coming.  And when they do My friends and family will arrive onto the pearly gates full and ready for a nap.

Valentines day comith

My wife and I think that Valentines day is a great day.  We don't really participate in the traditional sense.  You know flowers,  extravagant gifts and dinner n a restaurant. 
Flowers we don't give especially roses because the growers jack the prices through the roof just because they can.  Some times as much as tripling the normal price.
Extravagant gifts because out love for each other is the best gift of all and you cant even buy it at a mall.
Going out to eat on Valentines usually always over crowded with people that are only out because they think that that is the way to show their lover this how mush they love them.  I say WRONG.

Valentines Day was invented by Hallmark and shopping stores,  maybe there is a holiday mafia out there that is in control of the media airwaves to guilt us into behavior that can leave us broke and disappointed in the end. 

I know many of you think that I am being cynical.  I am not.  I am  a hopeless romantic,  I try to show my love for my wife and children all year not on just one day.  I try to do things daily to show how my heart feels for them.

If you are married,  in a relationship or a parent take a few minutes each day and try to do something that will show your loves how you care.  It doesn't have to be a big over the top gesture I think that the smaller ones mean more because they are usually spontaneously out of the heart.  For your children drop a note
telling them how proud  you are of them and how you cant wait to see them after school, into their lunch box or backpack.  For your wife or husband do the same drop a note in the fridge or in their favorite coffee mug telling them how appreciative you are for their hard work and dedication to you and the family. 

Learn how to make your lovers Favorite meal.  Small things over a period of time will make a bigger impact in the long run. 

So I guess what I am rambling about is i like the idea of valentines day but I think that we should practice it all year long for the ones we love.

Operation pluck a duck

Today jodee and I will be plucking two ducks that my neighbor shit for me.
I'm a little nervous because, well you know it's not everyday you have to removve your foods outer layer before you have to cut it.

I will be posting photos and a video if I can figure that out. Stay tuned. I'm going to try not to hurl. Just kidding.

After I fabricate the flying beasts I will be making two products

1. Duck confit. Into duck hash for dinner on saterday night
2. Duck Brest prosciutto

Sounds really difficult but I will tell you it is not. I think that the feather plucking will be the scariest part.

The grocery store

Most men travel to Home Depot thinking of things to do around the house that will make them feel manly or needed.. Trust me i get it,  the only thing is my Home Depot is not full of eclectic tools nails and wrenches to make me feel like i am not swinging a 2 inch hammer.  My Home Depot is on of products that will turn into a delicious culinary vacation that I create with the help of my  tools iron oil steal and fire.  I am referring to my local farmers markets, grocery stores, cheese shops, wine shops and other specialty stores that will help transform my table into a place of wonder and amazement.  I love to tickle your palette..

About 10 years ago i decided to leave the culinary world to pursue other things that I thought would bring me to a place that food did, and hopefully with half of the hours.  While I have enjoyed the past ten years without being behind the gun on a line in the kitchen,  creating friendships that I hold most valuable and being able to have the freedom to be the father and husband that I had always wanted to be.  In the back of my head
I have secretly missed the controlled chaos the the restaurant industry gives, those brave enough to play there.  The restaurant is a place of miss fits and magicians always creating a new and exciting experience to those who walk the front door. 

Being that I have missed it so, I am definitely to fat and out of shape to jump right back in to the kitchen and try to lead an army of men and woman into culinary battle.  I have decided to embark on this little project and see where it might take me. 

I am going to be writing about my experiences in the kitchen from the comfort of my own home..  From the food I prepare for my wonderful wife and children,  To the delicious morsels I make for all the dinner parties that my betrothed and I create.

I hope that you all enjoy my quirky little blog space and get your friends and family to follow also. I also hope that I might inspire you to also create in your own kitchens for the people that you all hold dear to your heart.  There is no greater act one can do for another than cook a meal out of passion and love to nourish their stomachs. 
For those of you that can't cook I say this " You can you just don't".  I f you can read you can cook.  If you make a goal to run a marathon do you just get up and haul your ass 26 miles?  That would be NO,  start small make it enjoyable.  I will show you how to have fun in the kitchen.
